Rich invented KC Masterpiece Barbecue Sauce, you see, and he was the first to realize you could make the sauce match the meat by adding a shot of liquid smoke. (Liquid smoke is an all natural product–made by burning logs in a pit, then condensing the resulting smoke in a still.) He also gave Steven his lifelong archives on the history of barbecue–an act of unbelievable generosity, which inspired the opening chapter of BBQ USA.
