Our destination: one of the best barbecue joints, not just north of the Mason Dixon line, but in the U.S. period: Dinosaur Bar-B-Que. Don’t let the tattooed bikers and Harleys lined up in front of the restaurant deter you. This is a food focused, and dare I say family friendly restaurant run by a pit master who got his start grilling on a 55 gallon barrel drum at biker meets. Today, John Stage blasts his Harley between restaurants in Syracuse, Rochester, and most recently Harlem, adding just the right number of hickory logs to his all wood burning pits, transforming pork shoulders and slabs of ribs into smoky morsels of meaty perfection. This is the real deal, folks. Run, don’t walk to try it.
