It’s official! Reservations are now being accepted for Barbecue University™ 2017, what Forbes writer Larry Olmsted called “one of the best food lover’s events in the nation.” Two back-to-back sessions will take place at the luxurious Forbes Five-Star Broadmoor resort in Colorado Springs, Colorado: June 9–12 and June 12–15.
With global grilling authority Steven Raichlen as your guide, you’ll take an exclusive tour of the world’s barbecue specialties in three fascinating, delectable days. (You’ve likely read Steven’s award-winning books like The Barbecue! Bible or Planet Barbecue. Or watched his latest TV series, Project Smoke, on American Public Television.)
The theme of this year’s technique-driven program is “Smoke and Fire.” Expect the smoked and grilled foods you love, but with Raichlen’s ingenious twists—like short rib “steaks,” Jamaican jerk brisket, and pastrami bacon. Out-of-the-box appetizers like Nashville hot wings and grilled halloumi cheese flambéed with ouzo. Over-the-top dishes you’d never dream you could grill, like a spectacular planked whole Chinook (king) salmon and sizzling prime rib spit-roasted to sanguine perfection over wood. Awesome steaks and burgers. Plus outrageous desserts such as smoked chocolate bread pudding and “doughnut” kebabs. Even smoked and grilled cocktails. More than 30 recipes in all.

Barbecue University kicks off with a casual cocktail reception where you’ll be personally welcomed by Steven and meet your fellow students over small plates featuring specialties from the Broadmoor’s many fine restaurants.
You’ll spend the next three mornings at the Cheyenne Mountain Lodge, the magnificent timber and glass classroom and dining hall for BBQ U. Enjoy breakfast and coffee, then stroll outside to survey the “burn area” where more than three dozen grills and smokers have been assembled for your use.
Our jaw-dropping collection features some of the world’s most sophisticated grilling equipment with some of the most primitive. Supergrills like the Kalamazoo tri-fuel, Fire Magic, and Memphis Wood Fire Grill (a top-of-the-line pellet grill). Stalwarts like Weber kettles and smokers (including the new Summit charcoal grill) and Pit Barrel Cooker. There’s a Yoder Cimarron Competition offset smoker, and a wood-burning pizza oven, as well as kamado-style cookers like the XXL Big Green Egg. Among our international grills are a lust-worthy Argentinian wood-burning grill by Grillworks, and an ingenious multi-spit Brazilian rotisserie by Carson Rodizio.

Each class concludes with a lavish buffet-style lunch featuring the day’s recipes. Afternoons and evenings, you’re free to enjoy the Broadmoor’s three world-class golf courses, fishing, hiking, zip-lining, spa, bowling, etc. Or visit Pike’s Peak, Garden of the Gods, and other attractions in the Colorado Springs area. Barbecue University is a terrific experience to share with your spouse, son or daughter, grandchildren, siblings, friends, or co-workers.
