Meet Adam Myers, co-owner and pit master extraordinaire at Burn Co. Barbeque in Tulsa, Oklahoma. Myers spent 12 years working for local pit manufacturer Hasty-Bake, and he does all his smoking on these singular Oklahoma-built grills. He burns Ozark hickory and oak with hickory chunks for smoke.
The results are pretty amazing, from spice-crusted baby back ribs to melt-in-your mouth pulled pork. Get here early or expect a wait. I drove all the way from Kansas City to eat here.
