It is a brisket in a smoker:

http://www.13hourbrisket.com/?utm_source=newsletter&utm_medium=email&utm_campaign=brisket-email#/

To promote how long they smoke the briskets for their smokehouse brisket sandwiches, they are showing one in a smoker.

It looks like it is resting on a block of ice, and it is folded over. It looks totally unrealistic, as it is the only one in the smoker, and the smoker has a glass window. They are trying to set a Guinness world record for the longest commercial. It is funny for a couple of seconds, and they do have pop up trivia questions where you can win prizes. Check it out so you can say you saw the world's longest commercial.

Looks like I'm going to have to wait for the Youtube video.

I wonder if it shows the brisket being checked for temperature and tenderness, or if it just gets yanked after 13 hours.

That's what happens when the food stylists get involved! 8)

Actually it's a full packer, not a flat folded over, and the "ice" that appears partway thru is a wad of foil
shielding the end of the flat from direct heat. Argree. I'll have to stop by an Arby's just to check it out.

Apparently it's one of Arby's most successful new products in quite a long time.

I did try one when it first came out and it's actually not too bad if everything's kept in perspective.

In other words, I don't think it's going to put Aaron Franklin out of business anytime soon.

I guess I don't know what a full packer looked like. Thanks for the info.

I wonder how they get away with a standard time like 13 hours? I have had them cook in anywhere from 8-13, and consider a brisket done when it SAYS it's done, and not by a clock...

Uniform size, and uniform temp ( they have billions of dollars, they can get same size and temp),
will likely allow at least 13 hours of smoke time.

I bought, for the first time, Arby's brisket sandwich the other day.

I agree with ScreamingChicken, it was good. I did look inside the sandwich, and the meat looked
and smelled like it was smoked. I did speak to the manager, and he said that they receive
about 5 fully smoked briskets a day, then warm slices of the meat over a grill
before serving. He denied that liquid smoke is ever used. I then stopped
the interrogation and ate the sandwich.

I have smoked the same sized brisket many times with widely varying results. I'm not sure how they can guarantee the consistency of the internal marbling, etc. but I suppose a corporation of that size can work miracles with food science that we mere mortals will never afford. I have yet to try their brisket, so I can't comment on what I think of the quality. When I do, I will ask for it plain without anything to mask the meat...

Shoot, I went back to that Arby's youtube commercial and just realized that
it goes on for 13 HOURS !
I think I'll play this during Christmas on the TV instead
of the wood burning fireplace!
