What Is It? The Potato Grilling Rack

Think of the perfect baked potato: the skin crisp; the interior creamy and fluffy; the hot puff of steam that rises so invitingly when you cut into it. Now think of that same potato subtly infused with wood smoke. Potato perfection just got redefined.

The Potato Grilling Rack easily accommodates four large baking potatoes. Simply scrub the potatoes (preferably high-starch potatoes like Russets), generously rub the skins with olive oil or butter, and season with coarse salt and pepper or your favorite barbecue rub. Position the potatoes on the upright stainless steel tabs and push down to secure.

Set up your grill for indirect grilling and preheat to medium-high. Put soaked wood chips on the coals, in a smoker pouch, or in a smoker box. Arrange the Potato Grilling Rack in the center of the grill grate away from direct heat. Close the lid. Smoke-roast the potatoes until they are squeezably soft, about 1 hour. (The metal tabs actually help the potatoes cook faster by transmitting heat to their centers.)

Remove the potatoes from the rack. Split, then fluff by squeezing the ends toward the center. Serve with your favorite toppings.
