Hot paprika is one of my favorites. If you get a chance, pick up some of Budapest's Best. I Use it for kicking up the heat in chili and the like. It has a nice complementary flavor that goes with the chili seasoning.
Ditto on the Penzeys. I make Emeril Essence (with Hugarian sweet paprika) from Penzeys spices exclusively and it is far superior than store bought. Their catalogues have lots of recipes and ideas also.
