I am wanting to try to get myself set up for any situation when it comes to grilling one piece at a time. I already started with the Maverick ET-732, now the PBC, just got a thermapen finally this week after 2 years and also purchased a couple cheapy utility knives at Sam's that look like they MIGHT work pretty good for trimming butts and brisket, if I can keep them sharp enough.
What types and sizes of knives do you think would make the best Frankenstein set of well rounded knives needed for any BBQ situation?
Any recommendations for a good slicing knife also?
What about knife sharpeners?
Any particular manufactures to avoid?
I am on a budget and probably will only be able to buy 1-2 pieces at a time so not looking for a 300.00 professional chef knife kit, least not right now. We have a Wolfgang Puck knife set with a steel but even those were not very good for trimming down ribs to St Louis style probably not sharp enough.
