When wet brining isn't practical I've had pretty good luck salting chicken well in advance of cooking (dry brining).

One of my go-to recipes is chicken under a brick, brined or not. I picked up a few big bacon presses from Cabela's this winter at $9 apiece, so this year it should be even more fun.
Unlike propane, you'll never wake up scorched and naked in another county because you mishandled a bag of briquettes.
