Dennis, you don't. At least not in the states.. Its not exported from Jamaica where it's principly grown, as it is export controlled by the government. Try growers in Mexico, or Central America if you can find one. None are stateside. Sorry.

I aggree with the previous poster, I tried for some time to find a location for allspice wood purchase with no luck. I did find a location for you to purchase whole allspice berries. I am told that you can soak and use them as you would wood chips.

Does the Man himself know of a source for allspice wood? It is impossible to make authentic jerk without it. I've been looking for a source for years.
