Saw the show last week on New York Strip. My pallet was wet. Now I am looking to verify the correct preparation instructions. I have family coming over and 8 steaks waiting to grill. I remember the grill marks with the quarter turns and to season with sea salt and pepper, but I can not remember cook time. Please help!

Actually the cooking times will vary with the thickness of the steaks and the size of the grill. You might want to do a trial run first. I am still working out the details on my gas grill and am not wholly satisfied although my guests rave about the results..

One thing you might want to consider for extra punch is to use either mesquite or hickory to smoke them while they cook.
