I picked up a small pork loin roast with the ribs still attached. Made a herb paste from fresh herbs in our garden (Spicy Oregano, Chives, Thyme, Rosemary) add some dried Cilantro and Parsley. Also used the greens from the fennel I grilled. Mixed those up with some EVOO, Melted butter, garlic S&P. I also grilled some fennel. Rolled potatoes in oil and sea salt. Wrapped in foil and baked with pork. The pork I grilled direct to sear and get the crust and then finished indirect to 165*.

Wolfpack,

That is an outstanding looking pork loin you got there, that plated up picture looks so good!!!

And that was a daring move, moving the grate while it was hot, good work by you!

Great looking pork loin, Wolfpack! Looks like it was done perfectly! :D

So what kind of smoker is that? Looks a bit like an ECB but not quite.
Unlike propane, you'll never wake up scorched and naked in another county because you mishandled a bag of briquettes.

Nicely done, Sir! Even more daring was moving it all with bare feet. That could be painful. Glad it wasn't.
