What you're looking for is called a "Packer" brisket.
Meaning the flat and point are still attached.
Around here neither Sams nor Costco carry them.
But would you believe the Super Walmart does!?!
We have a butcher shop up the road that even has their own slaughterhouse
so I can order pretty much any primal I want with enough notice.
They're a bit higher but boy O boy is their product good.
I haven't done a brisket yet this year. Maybe next weekend. I have, in the past, bought the packer from Super WalMart. They're not labeled angus or anything but are labeled choice.
My oldest stepson has a friend (lives not to far north of you Brad - up toward the Dells) that raises a couple head to butcher every year, usually toward the middle of October. I've got an order in for a packer when he does.
Used to have a husband/wife truck driving team that would run from the Atlanta area to Chicago metro. He was a trained butcher in another life and raised a few head of a small, forget the breed but it is indigenous to the southeast, cattle as a hobby. He also butchered some time in October and would bring me a few steaks, some hamburger, and a packer. Wish I still had contact with him. His beef was really good.
