Have you ever been to Hometown Bar-B-Que in Red Hook, Brooklyn? Owner Billy Durney smokes his briskets for a minimum of 15 hours until each slab jiggles like the most amazing Jello you've ever eaten. Plus, he wraps the meat in butcher paper and rests it for five hours.

Steven's post made me want to visit this place asap. See his take on it:

I have some e-quaintances in the NYC area and will have to point them in the direction of Hometown.
