Been cooking plenty, just have been bad about posting. :oops:

Wanted to kick off the season with some ribs, so why not do 4 racks.

Next up was some healthy cooking, We are big fans of grilled Salmon.

On to the seasons first Spatchcock Chicken, simply Swamp Venom for the rub, probably the best one I have made:

Lastly, Went Deep sea fishing yesterday and we caught two nice Striped Bass, Caught at 1:30pm on the BGE at 5:00pm:

How do you go deep-sea fishing if you live in PA??? :wink:

All 4 cooks look really good. I haven't spatchcocked a chicken in ages and should do so sometime this summer...maybe for Cornell chicken?

Very good question, good think I live on the border of New Jersey.. LOL if not, it's all Fly fishing when I'm home. :-)
