Marathon Recipe Testing Session for Planet Barbecue

What does it take to write a book like Steven’s forthcoming Planet Barbecue? Well, besides the hundreds of thousands of miles travel (53 countries and counting) and the thousands of hours of writing, of course we test each and every recipe. Often several times. Here are some scenes of a recent marathon recipe testing session that took place in Miami a few weeks ago. Directly below: part of the team (from right to left): Steven, Nancy Loseke, Heidi Sanchez, and Heidi Robb.



When we say we grilled everything, we mean everything. From Brazilian spit-roasted pineapple (pictured above) to a whole hog prepared in the style of Bali–tended to here by tester A.J. Mindermann.



The testing took place in Miami. The first step was to set up a complete outdoor kitchen with a half dozen grills and smokers.



Each morning we’d review the recipes to be tested. Changes were marked on yellow stickies and inputted in Steven’s computer. Note the cup of tasting spoons to just to the left of the computer.


Nancy ran the test kitchen, assisted by her chef friend, Heidi Robb. Here Nancy and Heidi spray a rack of Trinidadian style ribs with pineapple juice.
