OCTOPUS
Hot off the set of Le Maitre du Grill, chargrilled octopus! And for 11 million Greeks, barbecue just wouldn’t be complete without it.
Marinate the octopus with wine, lemon juice, olive oil, and oregano (preferably Greek). The recipe is in Planet Barbecue on page 520.)
Direct grill the octopus until lightly charred–the Greeks use charcoal. Then serve with ouzo (Greek spirits) and a Greek salad–the perfect Mediterranean meal!
