Nonya-Style Flank Steak

Ingredients

  • 1 1/2 pounds flank steak
  • 3 tablespoons vegetable oil
  • 3 cloves garlic, thinly sliced
  • 3 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 2 teaspoons aniseed or Chinese five-spice powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon freshly ground black pepper
  • Coarse salt (kosher or sea)
  • Nonya Sauce, for serving

Recipe Steps

Step 1: Using a sharp knife, lightly score the flank steak on both sides in a cross- hatch pattern. The cuts should be about 1/8 inch deep and 1/4 inch apart. Place the steak in a nonreactive baking dish just large enough to hold it.

Step 2: Heat the oil in a small skillet over medium heat. Add the garlic and cook until golden brown, about 1 minute. Transfer the garlic to a plate lined with paper towels to drain. Pour the garlic flavored oil into a heatproof mixing bowl and let cool to room temperature.

Step 3: Add the oyster sauce, soy sauce, sugar, aniseed, turmeric, and pep- per to the garlic oil. Season with salt to taste. Pour the marinade over the flank steak, turning it to coat both sides. Let the steak marinate in the refrigerator, covered, for 1 to 4 hours, turning it once or twice.

Step 4: Set up the grill for direct grilling and preheat it to high.

Step 5: When ready to cook, brush and oil the grill grate. Drain the flank steak, discarding the marinade. Arrange the steak on the hot grate at a diagonal to the bars. Grill the steak until cooked to taste, 3 to 5 minutes per side for medium-rare. Use the poke test to check for doneness. If desired, give the steak a quarter turn on each side after 1 1/2 minutes to create a handsome crosshatch of grill marks.

Step 6: Transfer the grilled flank steak to a platter or cutting board and let it rest for 2 to 3 minutes. Thinly slice the steak and serve it with the fried garlic slices sprinkled on top and the Nonya Sauce alongside for dipping.
