Annatto (Achiote)

The hard aromatic orange seed of a tropical plant native to the Caribbean. The flavor is tangy with a hint of iodine and spice. Achiote is the primary ingredient in recado rojo, a seasoning paste for cochinita pibil (spice-slathered, pit-roasted pig) in the Yucatan. In the Philippines, they fry it in vegetable oil to make an orange-colored oil for basting.
