A lean, flat, roughly rectangular slab of muscle that comprises the bottom section of a full packer brisket. This is the part most commonly sold in supermarket meat departments. Because it’s so lean, cook it in a foil pan with strips of bacon draped over the top to keep it moist during smoking.
