For many grill jockeys, charcoal represents the ultimate thrill in grilling. For others, it’s the ultimate hassle. Charcoal burns hotter and drier than gas, so it’s great for searing steaks and other meats. Charcoal grills have two other advantages over gas grills: They work better for smoking and you can also use wood as a fuel. Charcoal grills are somewhat messy to use and require frequent prodding and attention. So naturally, diehard barbecue buffs adore them. If you like the process of building and tending a fire, a charcoal grill is for you.
