A beef shoulder typically weighing 14 to 18 pounds. Popular in Texas, where it’s seasoned with salt and pepper and smoked for the better part of a day. Clod is the house specialty of Texas Hill Country barbecue joints like the Kreuz Market in Lockhart. Outside of Texas, you’re likely to find it at Latino markets.
