Flank steak

The flank steak is a broad flat muscle from the underbelly of the steer. It’s a highly flavorful cut, but tough and stringy. However, by thinly slicing the steak across the grain, you produce meltingly tender slices of beef that are richly flavored. It’s best served medium-rare.
