This cousin of ginger is used in Southeast Asian spice pastes. Galangal looks like ginger, but with zebra-like stripes on the skin. It possesses the peppery hotness of ginger but not the sweetness. Galangal is sold fresh and frozen at Asian markets. Dried galangal is a popular seasoning in Indonesia, where it goes by the name of laos. Fresh ginger mixed with black pepper makes an acceptable substitute.
