These are mixes of spices, herbs, seasonings, and often sugar that are used to give a base flavor to the meat, rather than season it. Rubs are usually applied to the meat several hours before cooking, so that a marinating effect takes place. Rubs foster the formation of a crust. There are dry rubs and wet rubs.
