The strip steak is lean, meaty, and firm textured. Depending on where you are, it will be called strip steak, New York strip, Kansas City strip, or top loin, among other names. Strip steak is basically the top loin without the tenderloin. New York and Kansas City strips are typically boneless; when called shell, club, or strip, the steak will generally have a piece of the bone.
