Recipe Notes

  • Yield: 1 baguette, about 20 slices


  • 1 baguette
  • 6 tablespoons (3/4 stick) butter, melted, or extra virgin olive oil, for brushing
  • Cajun seasoning (your favorite) or Old Bay seasoning (optional)

Recipe Steps

Step 1: Set up your grill for direct grilling and preheat to medium-high heat (400ºF). If you don’t want to have a grill going at the same time as your smoker, preheat the oven to 400ºF.

Step 2: Cut the baguette sharply on the diagonal into 1/2-inch-thick slices. Lightly brush both sides of each slice with melted butter or olive oil. Sprinkle with a little Cajun seasoning, if you like.

Step 3: Place the slices on the grill grate and direct grill, turning the slices over once, until toasted and golden brown, 1 to 2 minutes per side. (Watch carefully.) If using the oven, toast the bread directly on an oven rack for 7 to 10 minutes.
