Grilled Matzo with Garlic and Herbs

  • Yield: Makes 4 pieces and can be multiplied as desired

  • 4 sheets of matzo
  • 2 tablespoons extra-virgin olive oil (or as needed)
  • Coarse salt (kosher or sea) and freshly ground black pepper
  • 2 cloves garlic, minced
  • 3 to 4 tablespoons chopped fresh herbs, such as flat-leaf parsley, basil, chives, scallion greens, and/or tarragon

Step 1: Preheat your grill to medium-high.

Step 2: Lightly brush each piece of matzo on both sides with olive oil and sprinkle with salt, pepper, garlic, and herbs. Arrange the matzo on the grate. Grill until lightly browned and crisp on the bottom, 30 to 60 seconds. Invert and grill the other side the same way. Transfer to a cake rack to cool slightly (so you can handle it), then serve. I like to think of this as Passover bruschetta.
