Inside-Out Cheeseburgers and Grilled Corn Salsa

Don’t be fooled by the simple steps and simple ingredients—this meal packs quite the punch with little prep. Tricks include adding onion powder and garlic powder to quickly add more flavor, and mixing cheese, bacon, and scallions into the beef patties. And with ingredients you already have on hand—like leftover grilled corn and BUSH’S® Baked Beans—you can whip up a salsa more satisfying than anything that comes from a jar. Inside-Out Cheeseburgers and Grilled Corn Salsa

Ingredients

For the salsa:

  • 4 ears corn, shucked
  • 2 tablespoons extra virgin olive oil
  • sea salt and freshly ground black pepper
  • 1 each green bell pepper
  • 1/2 can (28 ounces) BUSH’S® Original Baked Beans
  • 1 each large ripe tomato, diced
  • 2 each scallions, trimmed and chopped
  • 1 each jalapeño, seeded and minced (leave seeds in for spicier salsa)
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons fresh lime juice
  • tortilla chips, for serving

For the burgers:

  • 2 strips artisanal bacon
  • 2 each scallions
  • 2 pounds ground chuck
  • 8 ounces coarsely grated sharp Cheddar cheese
  • coarse salt (kosher or sea) and freshly ground black pepper, to taste
  • 6 each hamburger buns, (brioche or kaiser rolls)
  • 4 tablespoons melted butter

Optional burger toppings:

  • Lettuce leaves
  • Tomato slices
  • Pickles slices
  • Sweet onion slices

Recipe Steps

FOR THE SALSA: Step 1: Set up well-oiled grill for direct grilling and preheat to high.

Step 2: Brush corn with extra virgin olive oil and season with salt and pepper.

Step 3: Grill corn until browned on all sides, 8-12 minutes, and transfer to cutting board to cool.

Step 4: Grill green pepper until browned on all sides and transfer to cutting board.

Step 5: Cut kernels from corn cobs and seed and dice green pepper. Place in large mixing bowl.

Step 6: Add baked beans, tomato, scallions, jalapeño, cilantro and lime juice. Stir to mix.

Step 7: Serve with tortilla chips.

Step 8: Serve remaining BUSH’S Original Baked Beans on the side.

FOR THE BURGERS: Step 1: Set up well-oiled grill for direct grilling and preheat to medium-high.

Step 2: Grill bacon and scallions until bacon begins to crisp and scallions have grill marks. Move to paper towel or cutting board.

Step 3: Cut bacon into slivers and slice scallions crosswise.

Step 4: Place ground beef, cheese, grilled bacon and scallions in a large mixing bowl and mix well with hands or wooden spoon.

Step 5: Divide meat into 8 equal portions.

Step 6: Working quickly and with light touch, pat each portion into a patty.

Step 7: Make slight impression in center of each patty.

Step 8: Arrange burgers on plate lined with plastic wrap and refrigerate until ready to grill.

Step 9: Generously season burgers with salt and pepper on both sides, then place on hot grate.

Step 10: Grill burgers until cooked through, 4-6 minutes per side for medium.

Step 11: To test for doneness, insert instant-read meat thermometer through side of burger into center: internal temperature should be about 160 degrees F for medium.

Step 12: Brush buns with melted butter and toast on grill, 1-2 minutes per side.

Step 13: Place lettuce leaf on each bun so the juices from the meat don’t make the bun soggy.

Step 14: Add burgers and optional toppings (tomato, pickle, onion slices), if desired. Serve immediately with BUSH’S Beans of choice or BUSH’S Grilled Corn Salsa.
