Michael Pollan’s Vinegar-BBQ Sauce
- Yield: Makes 3 cups -- enough for a 5 to 6 pound pork shoulder
- 2 cups apple cider vinegar
- 1 cup water
- 1/4 cup packed brown sugar
- 2 3/4 teaspoons fine sea salt
- 4 teaspoons hot pepper flakes
- 1 teaspoon freshly ground black pepper
Step 1: Combine the ingredients in a mixing bowl.
Step 2: Whisk until the salt and sugar crystals dissolve.
