Meet Singapore’s newest smoke master–Barbara and Steven’s son, Jake. Jake has come to this Southeast Asian island-nation as consulting chef to open a sizzling new restaurant called Wood, located on the waterfront in the new Vivo City shopping complex.

True to its name, all Wood’s food is cooked over cherry, oak, and other hardwoods–in a wood-burning oven, on a wood burning-grill and rotisserie, even in a wood-burning smoker Jake set up to smoke a cardamom coffee brisket. As far as we know, this is the first exclusively wood burning restaurant in Singapore–possibly in all of Asia.

So what’s on the menu? Here’s Jake’s take on Mexican grilled corn–this one made with supernaturally sweet Hokaido corn from Japan and grilled over fruitwood.
