Hot from my wood burning oven
Here’s the first dish I made in the wood burning oven–mac and cheese Barbecue Bible style. It’s a not so conventional mac and cheese made with provolone and gruyere cheeses, sauteed shallots and shiitake mushrooms, and a twisted noodle known as strozzapreti, “priest-stanglers.”
The butter and bread crumbs give you an audibly crisp crust.
Here’s the finished mac and cheese. The wood oven gives it a subtle but unmistakable smoke flavor.
