Super Bowl LX Menu: Patriots vs. Seahawks Game Day BBQ

The titans of the AFC/NFC Football Leagues , the New England Patriots and the Seattle Seahawks, will clash on Sunday. February 8, during Super Bowl LX, at Levi’s Stadium in sunny Santa Clara, California.

With ticket prices averaging over $7,500, most of us will be watching the Big Game with friends and family from the comfort of our own homes. Let’s face it: The seats are cheaper, lines to the bathroom are shorter, and the food is much, much better,

Each year, we compile Game Day menus that feature foods that are specialties of the teams’ home turf. (And this year, surf!) Of course, we always throw in a few ecumenical favorites of the tailgating crowd.

From New England (white uniforms), we nominate the following:

Barbecued Boston Butt (Pulled Pork)

Confusingly, Boston butt comes from the shoulder of a pig—not the rear. Salted pork butt was historically packed into wooden barrels for long sea voyages, often in the port of Boston. Thus the name. Pulled pork is not only a crowd-pleaser, but it’s a relatively inexpensive cut of meat. Shred while hot, preferably with meat claws. Serve on Hawaiian rolls for something different

Smash Burgers with Raichlen’s Special Sauce

A great halftime treat! For years, Steven’s extolled the virtues of cooking burgers on the grill (preferably over a wood fire), and for years I’ve inveighed against pressing those burgers with the flat part of a spatula (an act that squeezes the luscious meat juices onto the coals). But there’s one burger that does better on a griddle than a grill and that absolutely thrives when pressed. You guessed it: the smash burger. The genius of the method lies in smashing the burger on hot flat metal, pressing out the fat, caramelizing the meat, and crisping the edges.
