Recipes to Make in January: Grilled Comfort Food

When you hear the term “comfort food,” you might think of long-braised soups or stews, pot roast, or maybe a toasted cheese sandwich. But your grill can also produce soul-satisfying meals, too, while giving you an excuse to inhale some fresh air and polish your rep as a four-season griller.
Here are five recipes from Steven to get you started.
5 Grilled Comfort Food Recipes
1. Smoked Chicken and Sausage Gumbo
Invite the whole crew over when you make this delectable and authentic gumbo. (The recipe was shared with us and adapted for the grill many years ago from Mr. B’s Bistro, one of the finest Creole-style restaurants in New Orleans.)
2. Cattle Drive Steaks
There’s no greater reward for tending a fire in the cold than a perfectly cooked steak. The photo makes our mouths water.
3. Chipotle-Marinated Pork Tenderloin with Grilled Nopalitos Corn Salad
Pork tenderloin is a perfect cut for wintertime grilling as it cooks quickly. This version delivers awesome south-of-the-border flavors, and can be served with rice, beans, or a colorful salad featuring nopalitos and corn.
4. A New Macaroni and Cheese (with Grilled Onions, Chilies, and Corn)
For more than 10 years, this has been one of the most popular recipes on our website. It’s mac ‘n’ cheese for the record books, enhanced with grilled onions, chiles, bell peppers, and corn. Did we mention bacon? Oh, yea…
5. Cedar Plank Chocolate Brownie S’Mores
These are not the s’mores of your youth. These are bliss on a plank, a montage of chocolate brownies, gourmet marshmallows, and a splash of crème de menthe or Grand Marnier roasted to perfection on a cedar plank. The end of the meal can’t come fast enough when you have these to look forward to.
