Chicago-Style Italian Beef Sandwich

Another large American city—Chicago—is the birthplace of one of the country’s most extraordinary sandwiches. Steven literally wrote the book on this uniquely American barbecue specialty. In case you’ve not heard of it (unbelievable), a chicken is smoke-roasted upright and supported by a partially full beer or soda can inserted in the main cavity. An indecorous presentation, but a summer staple.

Grilled Swordfish with Salsa Macha

You might call this peanut butter swordfish. You’d be doing it a great injustice. Yes, toasted peanuts figure prominently in the salsa, but so do two classic Mexican chiles and vampire-defying doses of garlic. But don’t take my word for it. The New York Times called salsa macha an “indispensable condiment.” Serve with all manner of grilled seafood and poultry.

Smoky Bourbon Peach Cobbler

This recipe comes from our good friend, Russ Faulk, grill designer and the author of Food + Fire: “My father is from Georgia, so it was only natural that one of his signature dishes when I was growing up was peach cobbler. It was one of my favorite summertime treats, and my adaptation of his recipe is super-easy to make. The flavor has been ratcheted up with a little bourbon, a hint of maple syrup and a whole lot of pecan wood smoke.”
