Real Deal Holyfield (Brisket Breakfast Taco) with Fire-Charred Salsa

Throw on a hoodie, put on a pot of coffee, and light the grill! That’s right: a grilled breakfast or brunch gets the day off to a fantastic start. This meal is also a great way to entertain on a budget. From the recipes below, you can put together a very appealing (and inexpensive) meal for friends and family. Round it out with fruit and maybe Nectarine Bellinis or a Bloody Mary bar. (For a recipe for Steven’s awesome Smoked Bloody Mary)

1. Project Fire Breakfast Pizza

You won’t even need to set the alarm. The prospect of an egg- and bacon-topped bacon pizza cooked to perfection on the grill will be just the incentive the family needs to get out of bed. (A very impressive dish if you have weekend house guests, too!)

2. Catalan Tomato Bread

I first ate this breakfast at a Spanish finca (farm) near the town of Mérida; called pa amb tomaquét, it’s one of Steven’s favorites, too. Slice a red, ripe, juicy tomato in half and set aside. Peel a large clove of garlic and cut in half. Grill four slices of rough-crumbed country-style bread on both sides until lightly toasted, about 2 minutes per side. Rub the bread with garlic, then with the cut side of a tomato half. (Discard the skin.) Drizzle with olive oil and sprinkle with coarse salt. If desired, top with thin slices of Serrano ham.
