Steven Raichlen's Barbecue! Bible


Caper Dill Sauce

Adapted from Steven Raichlen's BBQ USA


  • Yield: Makes about 1-1/4 cup

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon brined capers, drained and roughly chopped, or more to taste
  • Coarse salt and freshly ground pepper to taste

Step 1: Whisk the sour cream, mayonnaise, lemon juice, and lemon zest in a mixing bowl. Stir in the dill and capers.

Step 2: Add salt and pepper to taste. (Remember, the capers are salty.)
