Ingredients
- 1 small jicama (1/2 pound), peeled and cut into 1/4-inch dice
- 1 ripe mango, skinned, seeded, and cut into 1/4-inch dice
- 1/2 red bell pepper, cut into 1/4 inch dice
- 1/2 yellow bell pepper, cut into 1/4 inch dice
- 2 scallions, finely chopped
- 2 jalapeño chiles (or to taste), seeded and minced (for a hotter salsa, leave the seeds in)
- 1/3 cup chopped fresh cilantro
- 3 tablespoons fresh lime juice, or to taste
- 1 tablespoon extra virgin olive oil
- 1 tablespoon brown sugar, or to taste
Recipe Steps
Step 1: Combine the ingredients for the salsa in a mixing bowl and toss to mix. Correct the seasoning, adding sugar or lime juice as necessary: the salsa should be a little sweet and a little sour. Note: you can combine the ingredients in a bowl, but toss at the last minute—ideally not more than 30 minutes before serving.
