Step 1: Generously season the ribs on both sides with the rub.
Step 2: Set up the grill for indirect grilling and preheat to 325 degrees. Add soaked, drained hardwood chips to the coals.
Step 3: Arrange the ribs on the grill grate away from fire. Grill until a toothpick inserted between the bones goes in easily, about 2 hours.
Step 4: Brush with the sauce and sear the ribs directly over the fire for 3 to 5 minutes. Serve with additional sauce on the side.
