Philly Cheesesteak

- Total Time: Makes 2 and can be multiplied as desired
Ingredients
The essentials:
- 8 ounces rib-eye steaks, sirloin, or top or bottom round
The optionals:
- 1 small sweet onion, peeled and thinly sliced
- 1 poblano chile or 1/2 green bell pepper, cut into 1/4-inch strips (discard the core and seeds)
- 6 ounces button mushrooms, cleaned, stemmed, and thinly sliced
To finish the cheesesteaks:
- Oil for the griddle
- 2 hoagie rolls, cut almost in half through the side
- Mayonnaise
- Chopped pickled hot peppers or hot pepper relish
Recipe Steps
1: Slice the steaks as thinly as possible. If using rib-eye or sirloin, you can use a knife. If using top or bottom round, it helps to partially freeze the meat first, then slice it on a meat slicer or on the slicing disk of a food processor.
2: Heat your griddle or plancha to medium-high with one zone on low. Oil it well.
3: If using onion, peppers, and/or mushrooms, place them on the medium-hot part of the griddle. Cook the onions until browned, 2 to 4 minutes, turning with a spatula. Move to the warm part of the griddle. Cook the peppers and mushrooms separately the same way and move to the warm part of the griddle.
4: Re-oil the griddle. Add the steaks and cook until sizzling, browned, and cooked through. Tradition calls for the steaks to be well done. When the steak is almost cooked, lay the cheese slices on top to melt. Cover with the griddle dome to speed up melting.
5: Meanwhile, warm the hoagie rolls, cut side down, on the griddle.
6: To assemble the cheesesteaks, slather the inside of the buns with mayonnaise and hot peppers (if using). Add the steaks with the melted cheese. Add the onions, peppers, and mushrooms if desired. Get ready to sink your teeth into one of America’s great sandwiches.
