Potato Pancakes

Crisp, golden potato pancakes made with grated Yukon Gold potatoes, garlic, and egg, then cooked on a grill pan until browned outside and tender in the middle. Keep them moving with frequent flips so they don’t scorch, then serve hot, with applesauce on the side if you want.

Potato Pancakes

Ingredients

  • 3 medium Yukon Gold potatoes, grated
  • 1 clove garlic, chopped fine
  • 1 large egg, beaten
  • 1 Tablespoon flour
  • 1 teaspoon salt
  • Apple sauce, optional

Recipe Steps

1: Peel and grate potatoes. Finely chop garlic on cutting board and generously sprinkle with salt. Mash with fork to combine. In a bowl beat the egg and add mashed garlic.

2: Place grated potatoes on a sheet of cheese cloth, pick up edges to form a ball and squeeze out excess water. You can also use a strainer and press out excess water with a wooden spoon.

3: Place potatoes, in bowl with egg mixture. Add flour and combine ingredients. Add additional salt and ground pepper to taste. Cover with plastic wrap and refrigerate until ready to cook on grill.

4: Heat grill-pan to medium heat. When pre-heated brush on oil to coat. With a large spoon scoop out potatoes onto grill (about 3 tablespoons per potato). Shape in rounds and flatten lightly. Cook until golden brown and flip. Since potatoes take a while to cook, flip constantly to avoid burning. The center of pancake should puff slightly when done, 12-15 minutes or so depending on the burner temperature.
