Ingredients

  • 6 Prime Beef Short Ribs
  • Dijon mustard
  • Kosher salt
  • 16 mesh black pepper
  • Apple cider vinegar for spraying

Recipe Steps

1: Prepare the ribs:
– Brush the short ribs with Dijon mustard.
– Season generously with a mixture of equal parts kosher salt and 16 mesh black pepper.
– Let the ribs come to room temperature.

2: Prepare the smoker:
– Preheat your pellet smoker to 225°F (107°C).
– Place two foil pans under the grates to catch drippings.

3: Smoke the ribs:
– Place the seasoned ribs on the smoker grates.
– Smoke for 3 hours at 225°F (107°C).

4: Increase temperature:
– After 3 hours, increase the smoker temperature to 250°F (121°C).
– Continue smoking for an additional 4.5 hours.

5: Maintain moisture:
– Throughout the cooking process, spray the ribs periodically with apple cider vinegar to prevent drying.

6: Check for doneness:
– Smoke until the internal temperature of the ribs reaches 200°F (93°C).

7: Rest and serve:
– Remove ribs from the smoker and let rest on a wire rack over a sheet pan.
– Slice the meat off the bone or pull apart with fingers.
– Serve with your choice of sides (mashed potatoes and cumin-spiced carrots suggested).
