Steakhouse Potatoes
Ingredients
- 4 large baking potatoes, such as russets, scrubbed
- Extra virgin olive oil
- 2 tablespoons Project Smoke Malabar Steak Rub
- Butter, sour cream, and minced chives, for serving
Recipe Steps
Steps: Prick the potatoes in several places with a fork. Rub with olive oil, then generously season the skin with the rub. Set up the grill for indirect grilling and preheat to medium-high. Arrange the potatoes on the grill grate. For a smoke flavor, add a few wood chunks to the coals. Roast the potatoes until tender, 1 to 1-1/2 hours. Split the centers, fluff by squeezing the ends. Add butter, sour cream, minced chives and more Malabar Steak Rub.
