Ingredients
- 2 racks St. Louis style spare ribs
- Texas Pepper Jelly All-Purpose Rub
- Texas Pepper Jelly Blended Honey Rub
- Apple cider vinegar
- Texas Pepper Jelly Mango Habanero Rib Candy
- Texas Pepper Jelly Mango Habanero Pepper Jelly
- Apple wood chunks
Recipe Steps
1: Season the ribs by first applying a light coating of the All-Purpose Rub, then follow with the Blended Honey Rub. Allow ribs to marinate in the refrigerator for 4 hours to overnight.
2: Remove ribs from refrigerator and let come to room temperature. Prepare your smoker for indirect cooking at 250°F, adding applewood chunks for smoke flavor.
3: Place seasoned ribs in the smoker. After 1 hour, begin spraying ribs every 30 minutes with a mixture of apple cider vinegar and Mango Habanero Rib Candy.
4: After 2 hours of smoking, make a glaze by heating together some Mango Habanero Rib Candy and Mango Habanero Pepper Jelly.
5: Pour the glaze onto a large piece of foil. Place the ribs meat-side down into the glaze. Coat the bone-side of the ribs with the remaining glaze.
6: Wrap the glazed ribs tightly in the foil and return to the smoker for 1 more hour.
7: Optional: Unwrap ribs and return to smoker at higher heat to caramelize the glaze.
8: Let ribs rest for 45 minutes before slicing and serving.
