Ingredients
- Jalapeños (quantity as desired)
- Leftover brisket, shredded
- Cream cheese, smoked
- Gouda cheese, shredded
- Bacon slices
- Steven Raichlen's Santa Fe Coffee Rub (or your preferred spice rub)
- Espresso Barbecue Sauce (homemade or store-bought)
- Eggs (optional, for topping)
Recipe Steps
1. Preparation:
- Preheat your smoker to 250 degrees.
- Core jalapeños, removing seeds. Reattach the tops using toothpicks.
- Mix shredded brisket, smoked cream cheese, and shredded gouda. Season with Steven’s Santa Fe Coffee Rub.
2. Assembly:
- Use a toothpick as an anchor for bacon. Pipe brisket mixture into jalapeños using a plastic bag.
- Smoke for about an hour at 250 degrees.
3. Crisping:
- Increase temperature to 375 degrees to crisp bacon.
- Glaze with espresso barbecue sauce as bacon browns.
