Texas Twinkies – Jalapeño Poppers

Ingredients

  • Jalapeños (quantity as desired)
  • Leftover brisket, shredded
  • Cream cheese, smoked
  • Gouda cheese, shredded
  • Bacon slices
  • Steven Raichlen's Santa Fe Coffee Rub (or your preferred spice rub)
  • Espresso Barbecue Sauce (homemade or store-bought)
  • Eggs (optional, for topping)

Recipe Steps

1. Preparation:

  • Preheat your smoker to 250 degrees.
  • Core jalapeños, removing seeds. Reattach the tops using toothpicks.
  • Mix shredded brisket, smoked cream cheese, and shredded gouda. Season with Steven’s Santa Fe Coffee Rub.

2. Assembly:

  • Use a toothpick as an anchor for bacon. Pipe brisket mixture into jalapeños using a plastic bag.
  • Smoke for about an hour at 250 degrees.

3. Crisping:

  • Increase temperature to 375 degrees to crisp bacon.
  • Glaze with espresso barbecue sauce as bacon browns.

4. Final Touch (Optional):

  • Top with a fried egg for a breakfast twist.

Jamaican Twinkies Variation:

  • Stuff jalapeños with leftover jerk chicken, smoked cream cheese, and pepper Jack cheese.
