Ingredients
For the Shrimp
- 12 jumbo shrimp, peeled and deveined
- 2 tablespoons olive oil
Spice Rub
- 1 teaspoon chipotle powder
- 1 teaspoon ancho chili powder
- 1/2 teaspoon cayenne pepper
- 1 teaspoon Kosher salt
- 1/2 teaspoon cumin
- 1/2 teaspoon Mexican oregano
- 1 teaspoon paprika
- 1/2 teaspoon freshly ground black pepper
For the Avocado-Lime Crema
- 2 grilled avocados
- 1/4 cup sour cream
- Zest and juice of 1 lime
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon freshly cracked black pepper
- Chipotle Spritz King (as needed)
Optional
- Mezcal margarita with spice rub on the rim (for serving)
Recipe Steps
1. Prepare the Shrimp:
- In a small bowl, combine all the spice rub ingredients: chipotle powder, ancho chili powder, cayenne, Kosher salt, cumin, Mexican oregano, paprika, and black pepper. Mix well.
- Toss the shrimp in olive oil to help the spice rub adhere.
- Generously season the shrimp with the spice rub, ensuring they are evenly coated.
2. Set Up the Grill:
- Prepare a charcoal grill for direct grilling. Add two wood chunks to enhance the smoke flavor.
