Three-Alarm Grilled Shrimp with Chipotle Spritz King Spray

Ingredients

For the Shrimp

  • 12 jumbo shrimp, peeled and deveined
  • 2 tablespoons olive oil

Spice Rub

  • 1 teaspoon chipotle powder
  • 1 teaspoon ancho chili powder
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon Mexican oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon freshly ground black pepper

For the Avocado-Lime Crema

  • 2 grilled avocados
  • 1/4 cup sour cream
  • Zest and juice of 1 lime
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon freshly cracked black pepper

Optional

  • Mezcal margarita with spice rub on the rim (for serving)

Recipe Steps

1. Prepare the Shrimp:

  1. In a small bowl, combine all the spice rub ingredients: chipotle powder, ancho chili powder, cayenne, Kosher salt, cumin, Mexican oregano, paprika, and black pepper. Mix well.
  2. Toss the shrimp in olive oil to help the spice rub adhere.
  3. Generously season the shrimp with the spice rub, ensuring they are evenly coated.

2. Set Up the Grill:

  1. Prepare a charcoal grill for direct grilling. Add two wood chunks to enhance the smoke flavor.
  2. Scrape and oil the grill grates to prevent sticking.

3. Skewer the Shrimp:

  1. Thread the seasoned shrimp onto metal skewers for easy flipping.

4. Grill the Shrimp:

  1. Place the skewered shrimp on the hot grill. Cook for 30 seconds on the first side.
  2. Flip the shrimp and spray the cooked side with Chipotle Spritz King.
  3. Cook for another 30 seconds, then flip again and spray the opposite side with the Chipotle Spritz King.
  4. Repeat the flipping and spraying process one more time on each side. Total cooking time should be about 2-3 minutes, or until the shrimp are cooked through and have a flavorful sear.

5. Prepare the Avocado-Lime Crema:

  1. In a food processor, combine the grilled avocados, sour cream, lime zest, lime juice, Kosher salt, and black pepper.
  2. Pulse until smooth and well combined.

6. Serve:

  1. Remove the shrimp from the skewers and serve with the avocado-lime crema on the side.
  2. Optionally, pair with a Mezcal margarita rimmed with the spice rub for an extra smoky and spicy kick.
