Ingredients
- 12 lamb loin chops
- Coarse sea salt and freshly ground black pepper
- 2 sweet onions, peeled and cut in half lengthwise
Recipe Steps
1: Arrange the lamb chops in a baking dish just large enough to hold them. Season generously on both sides with salt and pepper.
2: Using the coarse side of a box grater, grate the onion into a square of cheesecloth over a bowl. Wring the cloth to extract the onion juice. Alternatively, grate the onion into a strainer and extract the juice with the back of a wooden spoon. Pour the onion juice over the lamb chops and marinate in the refrigerator for 1 to 2 hours, turning the chops halfway through so they brown evenly.
3: Set up your grill for direct grilling and heat to high. Brush or scrape the grill grate clean and oil it well.
4: Drain the lamb chops and arrange on the grate. Transfer the lamb to a platter or plates and serve at once.
