Vietnamese Dressing

Vietnamese Beef and Rice Noodle Salad

Used with the Vietnamese Beef And Rice Noodle Salad in Project Fire Episode 301 – Barbecue Health Food

Makes about 1 cup

Vietnamese Dressing

Ingredients

  • 1 inch fresh ginger, peeled and grated or minced
  • 2 tablespoons granulated sugar
  • 1 clove garlic, peeled and minced
  • 2 tablespoons minced fresh cilantro
  • 3 tablespoons fresh lime juice
  • 3 tablespoons rice vinegar
  • 3 tablespoons Asian fish sauce
  • 2 tablespoons sesame seeds
  • 1 to 2 tablespoons honey
  • 1 tablespoon finely chopped roasted peanuts (optional)

Recipe Steps

1: Place the ginger, sugar, garlic, and cilantro in the bottom of a nonreactive mixing bowl. Mash to a paste with the back of a spoon. Add the lime juice, rice vinegar, and fish sauce and stir until the sugar is dissolved. Stir in the sesame seeds, honey, and peanuts, if using. Taste the sauce for seasoning: It should be sweet, sour, salty and aromatic. Best when made shortly before serving.
