Zesty Southwestern Pork Flank Fajitas

Ingredients

  • 2 pork flanks
  • 1/2 cup lime juice
  • 1/4 cup water
  • 1/4 cup olive oil
  • 4 garlic cloves, smashed
  • 2 tablespoons soy sauce
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon ancho chile powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper
  • 1 large onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • Homemade fajita seasoning (for onion and pepper)
  • Fresh tortillas
  • Mexican cheese, shredded
  • Hot sauce, salsa, sour cream (optional)

For Serving:

  • Fresh guacamole

Recipe Steps

1: In a bowl, prepare the zesty Southwestern-style marinade by combining lime juice, water, olive oil, smashed garlic cloves, soy sauce, sea salt, black pepper, onion powder, ancho chile powder, cumin, oregano, and cayenne pepper.

2: Place two pork flanks in a plastic bag and pour the marinade over them. Seal the bag and let the pork flanks marinate in the refrigerator for at least four hours.

3: Prepare a two-zone fire in a kettle grill: a direct zone for searing the pork and a cool zone in case of flare-ups.

4: Season thinly sliced onion and pepper with homemade fajita seasoning.

5: Grill the marinated pork flanks for ninety seconds on each side, giving them a quarter turn halfway through each side. This will create a nice sear on the exterior while keeping the inside juicy.

6: While the pork flanks rest, grill the seasoned onion and pepper until they are charred and tender.

7: Grill the tortillas briefly and keep them warm in a tortilla pouch.

8: Slice the pork flank against the grain, holding your knife at a diagonal to the cutting board to maximize tenderness.

9: To build the fajitas, place the sliced pork in the grilled tortilla and top it with the grilled onions and peppers, fresh guacamole, and shredded Mexican cheese.

10: Spice up the fajitas with hot sauce, or add salsa or sour cream according to your preference.
