Mayonnaise with a nice smoky bite. Serve this in a luscious Brisket Burger.

- Yield: Makes about 1/2 cup
- ½ cup mayonnaise, preferably Hellmann’s
- 1 to 2 chipotle chiles in adobo, minced, plus 2 teaspoons can juices
- 1 tablespoon fresh lime juice
- ½ teaspoon ground cumin
1: Place the mayonnaise, chipotle(s), and paprika in a small nonreactive bowl and whisk to mix.
2: If not serving at once, cover and refrigerate. The mayonnaise will keep for several days, covered, in the refrigerator.
